Las Nubes Washed Red Catuai

Xiomara del Carmen Marín Gradiz's farm, La Bendición, is situated at 1250masl in the Las Nubes community. The 3.7ha property is planted with caturra, maracaturra and red catuai varietals which are shaded by banana plants, inga and other native forest species.

The handpicked cherries are processed 2km from the farm at Xiomara’s mother’s wet mill. Here they are floated, depulped and fermented for up to 36hrs before being washed and delivered to Cafetos de Segovia for drying on raised African beds for 12 days.
