Las Lajas Black Honey Milenio

Milenio, a Sudan Rume hybrid varietal, from one of our favourites and third-generation producer, Oscar Chacón of Las Lajas.

Cherries for this lot are grown at 1500-1700masl in the fertile volcanic soils of Sabanilla de Alajuela and hand-harvested daily to ensure 100% ripeness. They’re then depulped and left with 100% of the mucilage, anaerobically fermented for 84hrs in tanks, dried on raised beds for 15-20 days with 3-4 turns/day. Once dry, beans are sorted and rested for 60 days prior to export.
