Fincamigos Farm serves as a concept plot where experimental farming and processing methods are developed and refined to produce highly sought-after coffees. The farm uses only the finest-quality beans from rare and exotic varietals. This particular nano lot is a Geisha. Selected cherries undergo anaerobic fermentation, are pulped, and then left for 56 hours in an aerobic mucilage fermentation. Afterward they are washed twice and sun dried inside a parabolic dryer.
