El Edén Washed Caturra Chiroso

This low-altitude farm had never dealt with specialty coffee before, because their land was ill-suited and too low for specialty crops. However, after persevering, tweaking, and experimenting with interesting and unique varieties they've found a way to both grow and process an outstanding and interesting specialty lot.

The process on this one is straight-forward but meticulously executed: cherries are hand-picked and floated to remove impurities before being immediately pulped. They're then placed into an open fermentation tank for 18hrs and then washed. Finally, they're dried in a mechanical system at a low temperature to carefully preserve quality.
