Coproca Natural

Coproca washing station can be found within the Nyamasheke district and is privately owned by C. Dorman. Cherry is delivered by 603 smallholder farmers from the surrounding area.

Once delivered to the washing station, cherry is floated and hand-sorted where only the best, high-density cherries are kept for processing. Cherry is washed and placed on mesh tables under shade nets to dry. Drying takes between 35-40 days and requires frequent (every 30-40mins) turning until the cherry reaches 11.5% moisture.
