Chelbesa Red Honey

In 2019, SNAP Specialty Coffee built a wet mill in a tiny pocket named Danache within the lush forest covered Chelbesa Village to process coffee for 476 smallholders farmers in the immediate area around it.

Once hand harvested ripe cherries were floated for density and quality, the outer skin and about 50% of the mucilage was removed from them. They were then dried with mucilage intact on raised beds in partial shade, hulled and stored for export.
